Whether you’re making them on your Blackstone griddle or in a skillet on the stove, you’ll have crispy toasted sourdough, layers of savory ham, melty provolone cheese, and rich, smoky bacon jam in just minutes.

I love having recipes like this in my back pocket for busy days because they’re quick enough for lunch but hearty enough for dinner. If you’re a bacon fan, don’t skip the optional crispy bacon—it adds even more crunch and smoky goodness. This is one of my favorite easy Blackstone recipes when I want something filling without spending a lot of time cooking.
Why You’ll Love These Blackstone Ham Sandwiches
- Ready in about 15 minutes.
- Made with only a few simple ingredients.
- Easy to prepare on the Blackstone griddle or stovetop.
- Perfect for lunch, dinner, or a quick weekend meal.
- Crispy golden bread with gooey melted cheese and incredible bacon jam flavor.

The night of my daughter’s dance recital we went to this restaurant with a sandwich similar to this and it was amazing! I knew it was the perfect meal to recreate on the flat top. The first night I made them we just used the ham, cheese, and bacon jam. Then my husband said I feed like adding bacon would really put this over the top. I agreed. So we made them a second night with some bacon slices and it is worth every calorie. I promise. So if you want you can skip the actual bacon and just use the bacon jam. OR if you cant find bacon jam, then use the bacon and they just use a sweet jelly/jam like raspberry!
Ingredients needed for these Bacon Jam Ham Sandwiches

| 🥓Bacon (Optional)– Additional bacon took these sandwiches over the top for me. You can skip if you want to keep it easy. 🥓Deli Sliced Ham– I used a little thicker sliced deli ham. 🥓Sourdough bread– I enjoy sourdough for sandwiches but of course you can use and Italian, French, or whatever you prefer., 🥓Provolone cheese– This was a great choice of cheese or you can use white American. 🥓Bacon Jam- This first night I made these I had found a Berry Bacon Jam at Aldi, then I bought this Pepper Bacon Jam at Kroger…both were amazing. If you want you can just add the bacon and then use a sweet jelly or hot pepper jelly. 🥓 Butter- I used a little butter to help toast the bread on the flat top (plus I like the taste) |

How to Make Bacon Jam Ham Sandwiches
Step 1: Cook the bacon if using. Preheat your Blackstone griddle/flat top over low-medium heat. Add the bacon and start cooking.
Step 2: Add the ham. Once the bacon is almost done to your liking, add piles of ham for the amount of sandwiches you want to make and let brown, then flip. Then add some cheese onto each pile.
Step 3: Toast Bread. Add some butter to the surface and add the sourdough bread. Let toast and then spread some spoonfuls of the bacon jam the toasted bread.
Step 4: Assemble. Add a few bacon slices, a ham/cheese pile on to the bread. Top with the other piece of toast and enjoy.

Tips for the Best Ham and Cheese Sandwich on the Blackstone
- Use thick-cut sourdough so it stays crisp while holding all the fillings.
- Cook over medium heat to allow the cheese to melt before the bread gets too dark.
- Add crispy bacon for extra texture and flavor.
- Press the sandwich gently with a spatula for an evenly toasted crust.
- Pair with chips, fries, soup, or a pickle for an easy meal.
Variations
- Swap the provolone for Swiss, cheddar, mozzarella, or pepper jack.
- Add sliced tomatoes, caramelized onions, or pickles.
- Spread a little Dijon mustard on the bread for even more flavor.
- Use leftover smoked ham instead of deli ham for a delicious twist.
Can I make these on the stovetop?
Absolutely! While these are fantastic Blackstone sandwiches, they’re just as delicious in a cast iron skillet or nonstick pan. So cook up your bacon and brown the ham in a pan and assemble sandwiches. Then just toast the sandwiches in the pan or pop under the broiler for a minute or two.

Frequently Asked Questions
What is bacon jam?
Bacon jam is a sweet and savory spread made with bacon, onions, brown sugar, and seasonings. It adds a rich, smoky flavor that pairs perfectly with ham and provolone cheese.
Can I make these ahead of time?
These sandwiches are best served fresh while the bread is crispy and the cheese is perfectly melted. You can, however, prep all of the ingredients ahead of time to make assembly even quicker. I actually use the whole loaf of bread and about 1.5 lbs of ham and my husband takes them top lunch for a few days.
