I am so excited to share my latest Halloween creation with you all! This Halloween Jack-o-Lantern Bundt Cake is so fun, delicious, and of course easy to make. Sofie and I had a great time making this one, and everyone enjoyed eating it.

When it comes to Halloween goodies, the best desserts are those that reflect the chilling traditions of this spooky holiday—a night when frightening characters prowl neighborhood streets, ringing doorbells, and then giggling maniacally as they threaten, “Treat or treat!” Granted, there are the old standbys like candy apples, orange-colored fruit punch, and cupcakes iced in hues symbolic of the season, but what about trying something a bit different this year like this Jack-o-Lantern Bundt Cake?

Last year Sofie and I had fun making my Simple Graveyard Bumpy Cake . This year I wanted to try something else. I had another can of pumpkin left and some cake mix so got to thinking. With just a few ingredients you can have this pumpkin cake out and ready to serve for all of your Fall get together’s. And your guests will be impressed, too.

What you need for this Halloween Jack-o-Lantern Bundt Cake

  • 1 box yellow cake mix
  • Eggs
  • Pumpkin -you don’t have to use pumpkin (if not using make cake according to box)
  • whipped vanilla frosting (or white)
  • Orange food coloring (If orange isn’t available, mix red and yellow)
  • Light corn syrup (optional)
  • Brown Sugar (optional)
  • Mini ice cream cones
  • Chocolate chips
  • Two large plastic eyes from a crafts store or dollar store

How to make this fun Halloween Bundt Cake

Preparation:

First start by mixing the cake mix, eggs, water, and pumpkin in a large bowl. I just whisked until well combined. Then pour the batter into a greased Bundt pan. (Note: if not using pumpkin- make according to box with oil).

Bake according to the box mix (about 30-35 minutes). When the cake is cooked thoroughly (an inserted toothpick will come out clean), remove the cake from oven and allow it to cool.


Decorating the Halloween Jack-o-Lantern Bundt Cake

For the orange frosting:

Once cooled, microwave the can of frosting for about 25-30 seconds until pourable. Add about 4-5 drops of orange food coloring and stir.

Slowly pour over the cake and use a spatula to spread over the entire cake.

For the stem & nose:

Brush mini ice cream cone with corn syrup, sprinkle or roll with brown sugar until thoroughly coated, and place on top of cake to create the pumpkin’s stem. Do another one to created his nose. I let Sofie do this and she loved it! (Note: this is an optional step you can just place cones as is onto cake).

For the face:

Place the plastic eyeballs towards the top of the cake. Then add chocolate chips in a zig zag to form the jack-o-lantern’s mouth.

Halloween Jack-o-Lantern Bundt Cake

This fun and festive Halloween bundt cake is easy to make and delicious! Perfect for all of your Fall gatherings!

Ingredients
  

  • 1 yellow cake mix Use another flavor if desired (white/spice)
  • 1 15 oz. can pumpkin
  • 3 eggs
  • 1 1/4 cups water
  • Orange food coloring If orange isn’t available, mix red and yellow
  • Light corn syrup optional
  • Brown Sugar optional
  • Mini ice cream cones
  • Chocolate chips
  • Two large plastic eyes from a crafts store

Instructions
 

  • In a large bowl combine the cake mix, pumpkin, eggs, and water. Whish until well combined.
  • Pour the mix into a greased Bundt pan and cook, following suggested temperature settings.
  • When the cake is cooked thoroughly (an inserted toothpick will come out clean), remove the cake from oven and allow it to cool.

Decorating the Orange-Glow Jack-o-Lantern Cake

  • Place the can of frosting with the cap and foil removed into microwave and heat for about 25-30 seconds until pourable.
  • Mix the orange food coloring with the frosting until the desired shade is obtained.
  • Pour the frosting over cake and spread until covered.
  • Optional step: brush mini ice cream cones with corn syrup, sprinkle with brown sugar until thoroughly coated, and place on top of cake to create the pumpkin’s stem and in the center for the nose.
  • Use chocolate chips to create a mouth.
  • Place plastic eyes in position (Be sure to remove them when the cake is sliced)

Note: if not using pumpkin, make cake according to box with oil.
You don’t have to roll the cones in corn syrup/brown sugar, just place on cake as is
