With all of these hot Summer days coming up I thought I would share my Air Fryer Turkey Stuffed Peppers with you! You don’t have to heat up the house with the oven and these giant peppers are a great meal with the bell peppers from the garden!
As some of you know Mike and I have been loving our Air Fryer/Ninja Foodi. We even (won) the new Ninja Digital Air Fryer Oven, too! Anywho quick cooking times with tasty results. These Air Fryer Turkey Stuffed Peppers turn out perfectly with the even distribution of cooking from the Air Fryer! If you don’t have an Air Fryer of course you can bake these, too.
Just a few simple fresh ingredients and of course a little heat make these Air Fryer Turkey Stuffed Peppers a different and delicious meal for these Summer months (or anytime)!

How to Make these Air Fryer Turkey Stuffed Peppers:
To make these Air Fryer Turkey Stuffed Peppers heat the olive oil over medium heat in a saute pan and add the ground turkey. Start cooking and add the jalapenos, onions, and tomatoes. Cook until ground turkey is no longer pink and the vegetables are soft and fragrant. Drain and return to heat.
Then add spices, brown rice, and water. And let cook for about 6 minutes until the rice is soft.
Stir in half of the cheese to the turkey mixture. Spoon into cleaned and hollowed out bell peppers. We had 3 extra large peppers but you can probably make about 4-5 smaller to medium sized peppers. Then place in Air Fryer and spray with cooking spray or brush with olive oil.
Cook at 360 for 8 minutes. Then rotate and cook for another 8 minutes. Then add the rest of the cheese to the top and cook for another 3 minutes until the cheese in melty and starting to brown.
We served ours with sour cream, salsa, and hot sauce. So add whatever toppings you would like! Enjoy!

Air Fryer Turkey Stuffed Peppers
Ingredients
- 1 tbsp olive oil
- 1 lb ground turkey
- 2 roma tomatoes chopped
- 1 jalapeno diced
- 1 small onion diced
- 1/2 tsp spanish smoked paprika
- 1/2 tsp cumin
- 1/2 tsp red pepper flakes
- Salt & Pepper to taste
- 1/2 cup brown rice instant
- 1 cup shredded cheese divided
- 3 large bell peppers or 4 medium, top cut off and seeds removed.
Instructions
- In a saute pan over heat olive oil over medium heat and add the ground turkey, tomatoes, jalapeno, and onion.
- Cook until turkey is browned and vegetables are soft and fragrant.
- Drain any grease and return to heat.
- Stir in spices, rice, and water and cover and cook for about 6 minutes.
- Stir in 1/2 cup cheese and spoon mixture into hollowed out bell peppers and place pepper tops back on the pepper.
- Place peppers inside an air fryer and spray with nonstick spray or brush with olive oil.
- Cook at 360 for about 8 minutes.
- Then rotate peppers and cook for another 8 minutes.
- Remove pepper tops and add remaining cheese on top of peppers and cook for another 3 minutes until cheese is melted.
Notes
**note- cooking times may vary according to the appliance. **can bake too follow instructions and place in baking dish in oven and bake until peppers are soft.
