With the holidays around the corner I wanted to experiment with a new breakfast casserole. This Bacon Cinnamon Roll French Toast Casserole is loaded with bacon and cinnamon rolls, really does it get any better than that?
I like easy breakfast ideas like my Eggs Benedict Casserole and this casserole is just that. This all comes together in one baking dish and bakes in under a half an hour. All you need is 4 ingredients….yes easy and delicious.
This recipe is perfect for Christmas morning too because is makes a smaller dish that way when you have a variety of entrees you aren’t over doing it. Of course if you want to make a 9×13 baking dish just double the recipe. Also this great for brunch so make sure you make up some Pineapple Screwdrivers to serve with it!
What you need for this Bacon Cinnamon Roll French Toast Casserole
- Can of Refrigerated cinnamon rolls
- bacon
- eggs
- milk
How to make this Bacon Cinnamon Roll French Toast Casserole
First cook you bacon the way you like it, I did mine quickly in our Ninja Foodi. Transfer to a paper towel then chop into pieces. Then cut the cinnamon rolls into quarters. Place both the cinnamon roll pieces and the bacon in a greased 8×8 baking dish.
Next add the eggs and milk right on top and stir so all of the bacon and cinnamon rolls are coated in the milk and egg mixture.
Bake at 375 degrees for about 25-30 minutes until the cinnamon rolls are golden brown and eggs are cooked. Then drizzle with the icing that came with the cinnamon rolls and enjoy hot with maple syrup!
Can you make this French toast casserole the night before?
I would think yes it just may lose its texture a little/ be a little soggy. So I like to make it first thing in the morning then pop in in the oven when we are ready to eat.

Bacon Cinnamon Roll French Toast Casserole
Ingredients
- 8 oz. bacon (1/2 package) cooked and chopped
- 1 12.4 oz can of refrigerated cinnamon rolls
- 2 eggs
- 1/3 cup milk
Instructions
- Cook and chop the bacon.
- Cut the cinnamon rolls into quarters.
- In a greased 8×8 baking dish combine the cinnamon roll pieces and bacon pieces.
- Then add the eggs and milk and mix until all ingredients are well combined.
- Bake at 375 degrees for about 27 minutes or until golden brown.
- Drizzles with icing from cinnamon rolls.
- Serve hot and enjoy with maple syrup.
