I love using my cast iron skillet for easy weeknight dinners. Whether it’s all stove top, or being able to toss it in the oven to broil, it just works! You can use a normal skillet, too. A few weeks back, I shared my Skillet Baked Chicken Alfredo recipe and also an all in one Cheesy Skillet Taco Spaghetti. I have been loving these all in one pan meals so much I knew I had to create a new one. We all love sloppy Joe meals over here so I figured why not try the mixture cooked with some potatoes….success!
Ingredients Needed for these Sloppy Joe Potatoes
Beef- I used a pound of ground beef but you can easily use ground turkey as well. Sloppy Joe Sauce – grab your favorite Sloppy Joe Sauce (I like the bold) but I just used Aldi brand here. Potatoes- I used two russet potatoes. Wash them up and cube them. I leave the skin on but you can peel them if you would prefer. Green Bell Pepper- In this recipe I used a green bell pepper- you can use red as well. Onion- for a little crunch, texture, flavor, and nutrients. Tomato- I opted for a fresh tomato but a can of diced tomatoes would be fine, too. Cheese – I used mild cheddar cheese here, Cole Jack or whatever you prefer works, too. |

How to make this Ground Beef and Potatoes Skillet
Step 1️⃣ Sauté the onion, peppers, and potatoes. Heat up your skillet over medium and add in some olive oil. Add in the onions, green peppers, and potatoes. Cook for about 5 minutes until the veggies are soft and fragrant.
Step 2️⃣: Brown the meat. Add in the ground beef and continue to cook about another 5 minutes until no longer pink.
Step 3️⃣: Add in tomatoes and sauce. Once the meat is browned, add in the chopped tomatoes and the can of sloppy Joe sauce. Add a little water to the can, swirl, and add to the mixture.
Step 4️⃣: Stir & Cover. Give everything a stir to make sure it’s well combined. Lower the heat to a simmer, cover and let cook about 10 minutes longer.
Step 5️⃣: Check potatoes. After 10 minutes, check the potatoes with a fork to see if they are tender. If not, cook few minutes longer.
Step 6️⃣: Make them cheesy! Add the shredded cheddar cheese to the top and cover for a few minutes until melted. Serve hot and enjoy!
Additions & Substitutions:
- Have different potatoes? No problem. You just need about 2- 2 1/2 cups of cubed potatoes.
- Want to spice it up? Add a little red pepper flakes or a fresh diced jalapeño.
- Want it a little healthier? You can used ground turkey or even ground chicken if you want.
- Want to make your own sauce versus a can? You an easily do that with simple ingredients such as ketchup, brown sugar, Worcestershire sauce, seasonings, and tomato paste.

Ingredients
- 1 tbsp olive oil
- 1 small onion, chopped about 1 cup
- 1 green bell pepper, chopped about 1 cup

- 1 15 oz. can Sloppy Joe Sauce plus a little water
- 1 cup shredded cheddar cheese or more
