Why I Love this Buffalo Ground Chicken Recipe
I buy ground chicken once in a while to change things up. A few months back I made my Shortcut Chicken Teriyaki Lettuce Wraps and really enjoyed those for my lunch for a few days. I decided I wanted to create some more ground chicken recipes. These Easy Buffalo Chicken Lettuce Wraps hit the spot! I kept it pretty simple by using a bottle of Buffalo Wild Wings Spicy Garlic Sauce but you can absolutely use your favorite buffalo wing sauce.
I love a good buffalo chicken wrap when we go out for lunch so this lettuce wrap recipe kind of gives me all the flavors I crave with less work. Basically cook the ingredients in a pan and add to lettuce wraps with a little drizzle of ranch! Delicious and lighter than the restaurant versions.
What You Need For These Buffalo Chicken Lettuce Wraps Recipe
- Olive oil
- Ground chicken
- Spicy Garlic Buffalo Sauce (or similar)
- Romaine Lettuce
- Shredded Cheddar Cheese
- Chopped Tomatoes
- Ranch
How to make these Easy Buffalo Chicken Lettuce Wraps with Ground Chicken
First heat some olive oil in your sauté pan and bring to medium heat. Cook up the ground chicken until no longer pink. There usually isn’t any grease but drain any liquids if necessary. Then add in the Buffalo Sauce (more or less to your liking). Stir it up and cook a little longer until heated throughout.
Then add the mixture to your Romaine lettuce leaves. Add the chopped tomatoes, cheese, and drizzle with ranch. Serve immediately. Or let cool and refrigerate the mixture for later. Enjoy!
Is this ground chicken wrap recipe healthy?
By swapping out lettuce for tortillas or bread, you are saving on some carbs and calories. PLUS you are getting in some greens. The ground chicken in very lean and better than having fried chicken that usually comes with buffalo chicken. The sauce is probably not the healthiest but we aren’t using too much for the entire pound of chicken. Then we are adding some chopped tomatoes for an extra dose of nutrients, too!
How long will this ground chicken recipe be good for?
Poultry is best within 3 days. If you aren’t consuming right away refrigerate the mixture and the lettuce separately so that the lettuce doesn’t get soggy. Then re-warm the meat mixture and assemble when ready to enjoy. This is a great meal prep, recipe too!

- 1/2 cup Spicy Garlic Buffalo Sauce (or similar) more or less to taste
- 4-6 Romaine Lettice Leaves washed and dried
- 1/2 cup shredded cheddar cheese
- 1/2 cup chopped tomatoes
