Easy Pumpkin Chocolate Chip Cake

Okay I am super pumped up to share this easy cake recipe with you. If you make anything from my blog, make it this Easy Pumpkin Chocolate Chip Cake! Seriously so easy with just a few ingredients and the perfect way to kick off the Fall season. Even if you think you aren’t a pumpkin fan, this cake will win you over. Mike loved it, which says a lot. Perfectly moist and super tasty!!

Last year I made my Chocolate Pumpkin Bundt Cake which only had four ingredients (basically pumpkin and cake mix). I remember loving it so much because it was so easy and seriously moist and delicious. The pumpkin replaces the oil to make it super moist and flavorful. Well, I wanted to make a vanilla cake version so here it is! This Easy Pumpkin Chocolate Chip Cake will be your go-to Fall dessert and would even be great for a Thanksgiving dessert for something different! If you want you can cut them into smaller pieces to make them more like pumpkin bars.

What you need for this Easy Pumpkin Chocolate Chip Cake

  • Yellow Cake Mix
  • Pumpkin
  • Eggs
  • Cinnamon
  • Chocolate Chips
  • Can of frosting

How to make this easy pumpkin cake recipe with boxed cake mix

First start by combining the yellow cake mix, water and eggs in a large mixing bowl. I just whisked everything together no reason for a mixer. Then add in the pumpkin, cinnamon, and chocolate chips.

Mix a little longer until everything is well combined. Then pour into a greased 9×13 baking dish.

Bake according to box instructions, about 28 minutes at 350 degrees. Then once done remove and let cool completely before frosting.

For the easy frosting part, just microwave a can of frosting for about 25 seconds and stir. Of course make sure you remove the foil and plastic cap. Stir and pour over the entire cake.

Sprinkle with a few more chocolate chips. Cut, serve, and enjoy! Note: store in the refrigerator.

Why bake with pumpkin?

I love baking with pumpkin because it replaces the oil for a little healthier version of your favorite sweets. It isn’t weird, the pumpkin adds a ton of moisture and the taste is mild.

Can I use a different cake flavor?

YES! White cake mix would work fine too and of course CHOCOLATE would be wonderful in this recipe, too!

Easy Pumpkin Chocolate Chip Cake

This easy pumpkin cake has just 5 ingredients and is perfect for Fall!

Ingredients
  

  • 1 15.25 oz Box of Yellow Cake Mix or white
  • 1 Cup water
  • 3 eggs
  • 1 15 oz. can of pure pumpkin
  • 1 tsp cinnamon
  • 3/4 cup chocolate chips
  • 1 16 oz. can of vanilla frosting or cream cheese

Instructions
 

  • In a mixing bowl combine the yellow cake mix, water, and the eggs.
  • Mix until batter forms and is well combined.
  • Then whisk in the pumpkin, cinnamon, and chocolate chips.
  • Pour into a greased 9×13 baking dish or cake pan.
  • Bake at 350 degrees for about 28-30 minutes.
  • Let the cake cool completely before frosting.

For the frosting

  • Microwave the can of frosting (cap and foil removed) for about 25-30 seconds and stir. Do not over heat if you do let cool.
  • Slowly pour over the entire cake and spread.
  • Top with more chocolate chips, cut and serve.
