This ham and Swiss cheese bubble up breakfast casserole is great to throw together to feed the whole family. I make different versions of these breakfast casseroles all the time. My first (and one of my most popular recipes) is my Bacon Breakfast Bubble Bake. Then a few years back I decided to make a sausage version, too. The holidays are around the corner, so I wanted to come up with a new easy breakfast idea that I could share with you!

Ingredients needed for this Ham cheese and Egg Breakfast Bake
Eggs-I used 8 medium farm fresh eggs. 6 large would work, too. Milk-I always add milk into the egg mixture to help fluff them up. We use 1% but whatever you have is fine. Even half and half would work, too. Garlic Powder-I like a little garlic powder to add a little more flavor. Canned Biscuits- this time I used butter flavored canned biscuits in the refrigerated section. Regular or homestyle works, too. I always just grab store brand. Ham-Here I used 2 cups of thick diced ham. So if you have leftover cooked ham, this is a great recipe. Or you can used Canadian bacon, too. Swiss Cheese-I thought Swiss cheese would compliment the ham in this recipe. I grabbed a block and hand shredded it. Other cheese will work, too. |

How to make this ham and cheese breakfast casserole
Step 1: Crack the eggs into a mixing bowl and add in the milk and garlic powder. Whisk it all up until well combined.
Step 2: Break up the biscuits into pieces and place at the bottom of a 9×13 (or a tad smaller sized) greased baking dish. You can cut them into quarters but I just rip them up by hand. Then add on the cut up ham.
Step 3: Pour the egg mixture over the biscuits and ham.
Step 4: Top with the shredded Swiss cheese and bake at 350 degrees for about 35-40 minutes until the eggs are cooked and biscuits are golden brown.
Additions & Substitutions:
- Sway out the cheese! You can easily swap for white cheddar cheese, mild yellow cheddar cheese, or pepper-jack, too!
- Want to use a different meat? You can easily used cooked turkey bacon, bacon, or pork sausage as well.
- Want to decide up some peppers and onions? Go for it!

Can you make this the night before?
Absolutely! I have’t done it because I have never been in a situation where that would be beneficial to me. I think it is so easy that it comes together in just a few minutes. But I have searched around and have seen many breakfast casseroles with biscuits made and set in the refrigerator overnight. You may just have a slightly longer cooking time.
