We are up on our vacation this week in Lake Leelanau past the beautiful Traverse City, Michigan. Known for wine and cherries, this part of the state is gorgeous! Vineyards, cherry trees, hop lots…. not to forget surrounded by water in every which way! We love it! How to make a Chocolate Cherry Tart?
Well there are many different cherry tart recipes that include pie crusts, different fillings, or like this recipe, chocoltae ganache. I kept this Michigan Chocolate Cherry Tart simple by using store bought chocolate pie crust. Then I made a super easy and tasty chocolate ganache filling. And then top it off with cherries that are cooked down with some water and sugar!
What is chocolate ganache?
Chocolate ganache is that silky, decadent smooth chocolate that can be used as fillings, candy coatings, or turned into frosting! I have a whole blog post about How to Make Chocolate Ganache! It is made by combined finely chopped chocolate or chocolate chips and heavy cream.
How to make this Michigan Chocolate Cherry Tart:
The first step is to make the chocolate ganache by gently heating the heavy cream and butter in a saucepan over low heat. Once the mixture starts to bubble a little, add chocolate, stirring until completely melted and incorporated. The mixture should be smooth and thick.
Then you pour the ganache into the chocolate pie crust and let cool in the fridge for 4 hours or until set.
Next pit the cherries. There are several ways to do this but I used a straw and pushed it through the center of the cherry until the seed popped out.
Then combine the cherries, sugar, and water in a small sauce pan and cook them until the fruit starts to break down a bit, and the water released from the fruit thickens. I helped smush down the cherries but you could definitley leave them whole, too. Cool the fruit in the fridge.
Once ready to serve, pour the cherry mixture over the entire pie, slice and serve! Or you can spoon mixture over ingdividual slices, as well. ENJOY!
Michigan Chocolate Cherry Tart
Ingredients
- 1 pre-made chocolate crumb crust
- 1 12 oz. pkg. semi-sweet chocolate chips
- 1 cup heavy whipping cream
- 2 Tbsp unsalted butter
- 1 1/2-2 cups of pitted cherries fresh about 25-30
- 1 tbsp sugar
- 1/4 cup water
Instructions
For Chocolate Ganache
- In a medium saucepan, combine heavy cream and butter.
- Let simmer until butter is melted and cream begins to gently boil.
- Remove from heat and add chocolate chips.
- Wisk until chocolate chips melt and texture is smooth and thick.
- Pour chocolate ganache into prepared chocolate crust.
For Cherry Topping
- Wash and pit the cherries by using a straw or cherry pitter.
- Add cherries, sugar, and water to sauce pan and heat over medium heat.
- Let the fruit cook and break down until the liquids start to thicken. I helped smush the cherries a bit but you can leave them whole if you would like.
- Refrigerate both the pie and filling until ready to serve (about 4 hours).
- When ready to serve pour mixture over top of pie and slice and serve!
