So last year I whipped up this red velvet cake. I decided on pistachio pudding for my green layer. It was simple to make, festive, and perfect to feed a crowd.

What Does Red Velvet Cake Taste Like

How to Make this Red Velvet Christmas Poke Cake with Cake Mix
Making doctored up red velvet cake mix is the start. I like to add a box of vanilla pudding mix to the cake mix. So whisk up the cake mix, pudding, eggs, oil, and water that is called for on the box. Mix until well combined but don’t over mix.
Then pour into a sprayed 9×13 baking dish. Bake according to the package instructions. Then let cool.
For the Pistachio Pudding Layer
Once the cake is cooled, poke holes all over the cake with the end of a wooden spoon. Then make the pistachio pudding by whisking it with the cold milk. Pour the pistachio pudding over the cake and spread.
For the Easy Cream Cheese Frosting
To be able to spread the frosting over the pudding, microwave the can of frosting (lid and foil removed) for about 25-30 seconds until you can stir it. Then pour over the pudding layer and spread around. Decorate with red and green sprinkles and enjoy.

Ingredients
- 1 15 oz. box of red velvet cake mix
- 3 eggs
- 1/2 cup vegetable oil (or according to box)
- 1 cup water
- 1 3.4 oz. box vanilla instant pudding
- 1 3.4 oz. box of pistachio instant pudding
- 2 cups milk
- 1 14 oz. can of Whipped cream cheese frosting
- Red & green Sprinkles
Instructions
- Combine the red velvet cake mix, vanilla pudding, eggs, oil, and water that is called for on the box. Mix until well combined but don't over mix.
- Then pour into a sprayed 9×13 baking dish. Bake at 350 degrees F for about 25 minutes (or according to the package instructions). Then let cool.
