If you don’t know what an Irish Car Bomb cocktail is, then the name of the drink may sound a little alarming or offensive. Basically you are dropping a shot of Irish whiskey and Irish cream into a half pint of Guinness. The combination for whatever reason just works. ( I am not going to lie, I have had a few of these dancing around the kitchen in my cousins house.)

Of course, I haven’t been to Ireland (yet) but generally the people cook with things they have or that are common in their land. Most desserts include apple cakes, soda bread, oatmeal muffins, and some stout cakes. And although the name of this cake would probably not sit well with the people, the flavors are there. In this Shortcut Irish Car Bomb Cake, we are upping the chocolate stout cake with some Irish Whiskey Ganache and include some Irish Cream liquor in the frosting. Yes- it is as amazing as it sounds.

Ingredients Needed for this Chocolate Stout Cake

  • Box of Chocolate or Devil’s Cake Mix
  • Guinness Stout
  • Eggs
  • Chocolate Chips
  • Heavy Cream
  • Irish Whiskey (Jameson’s or similar)
  • Canned Frosting
  • Cream Cheese
  • Irish Cream Liquor (Bailey’s or similar)

For the Guinness Chocolate Cake

I wanted this cake to stand tall so I used my springform pan. First mix up the cake mix with the stout and eggs and bake according to the package instructions (or center comes out clean when toothpick is inserted).

Let cool on the counter for a bit before releasing the cake and placing it on a plate or platter.

How to make Whiskey Ganache (Irresistibly Boozy)

Making ganache is easier than you think. Just add the heavy cream to a small pot and heat up over med-high heat. Just before it start to boil, pull it off and pour over the chocolate chips in a bowl. Add in the Irish Whiskey and whisk until smooth. Let this sit for a while and it will thicken up.

Irish Cream Liquor Cream Cheese Frosting

So yes you can make your own frosting but I am all about pretty quick and easy over here. So grab your mixing bowl and add in the can of frosting, add in half a package of cream cheese, and the Irish Cream Liquor. Mix until combined and smooth.

Assemble the Irish Car Bomb Cake

Once the cake is cooled, spread the Whiskey Ganache over the cake. Then top with the frosting. I like to use an offset spatula to make it easier to spread. Slice, serve, and enjoy!

Shortcut Irish Car Bomb Cake

This easy Irish cake has layers of moist stout cake, topped with an Irish Whiskey ganache, and finished off with Irish Cream liquor frosting.

  • 1 springform pan

Ingredients
  

  • 1 box chocolate or devil's cake mix
  • 3 eggs
  • 1 12 oz. Bottle Guinness Extra Stout or similar

For Whiskey Ganache

  • 1/2 cup heavy cream
  • 1 cup chocolate chips
  • 1 tbsp Jameson's Irish Whiskey or similar

For Irish Cream Frosting

  • 1 can cream cheese or vanilla frosting
  • 4 oz. cream cheese softened
  • 2 tbsp. Irish Cream Liquor

Instructions
 

For the Stout Cake

  • First mix up the cake mix with the stout and eggs and pour into a greased springform pan. Then bake according to the package instructions about 35 minutes (or center comes out clean when toothpick is inserted).

For the Whisky Ganache

  • While the cake is baking, add the heavy cream to a small pot and heat up over med-high heat. Just before it start to boil, pull it off and pour over the chocolate chips in a bowl. Add in the Irish Whiskey and whisk until smooth. Let this sit for a while and it will thicken up.

For Irish Cream Cream Cheese Frosting

  • In a medium mixing bowl add in the can of frosting, add in half a package of softened cream cheese, and the Irish Cream Liquor. Beat until combined and smooth.
  • Once the cake cools a bit, remove from the pan and onto a plate or platter.
  • Once cooled, spread the Whiskey Ganache on top on the cake.
  • Then spread the frosting on top of the ganache.
  • Serve, slice, and enjoy.
