simple Cajun sausage potato soup in slow cooker

I am so excited that it is finally soup and chili weather! I made this Slow Cooker Cajun Sausage & Potato Chowder on the first day of Fall, and it does not disappoint! Hearty, flavorful, and super easy to make with just a few ingredients.

I wanted to up my slow cooker recipes this season. Now that I basically work from home I have been trying to utilize the appliance a bit more often. I generally only like the slow cooker for pot roasts, chili, and stew. But I have been attempting more chicken dishes and things that are just ready to go when hubby gets home from work.

This Slow Cooker Cajun Sausage & Potato Chowder was somewhat adapted from an old cookbook I have. I swapped out a few things and used some Cajun pork sausage that we got from our butcher. And spiced it up a bit with a dash of red pepper flakes. But the recipe is simple. Just a few ingredients that all blend together in the Slow Cooker after a few hours.

What you need for this Slow Cooker Cajun Sausage & Potato Chowder

  • Cajun Pork Sausage (or hot/regular)
  • Onions
  • Evaporated Milk
  • Creamed Corn
  • Southwest Style Corn (or corn and chop up some bell peppers)
  • Potatoes
  • Seasonings of choice- Salt, Pepper, Red Pepper Flakes

How to make this Cajun Sausage & Potato Chowder in the Slow Cooker

This slow cooker potato soup recipe is so easy! First brown up the Cajun pork sausage in a pan with the chopped onions. While that is cooking, wash and cube up the potatoes.

Then once the sausage is done, drain and add to the slow cooker. Add all of the other ingredients, give it a stir and cook on low 6-8 hours or High 3-4 hours!

Boom done! Serve it up with some crackers, pepper, or even cheese on top. And enjoy 🙂

If you think the chowder is too thick- you can add in a little milk during the last hour of cooking.

Substitutions & Additions or this potato soup in slow cooker:

  • Regular Pork sausage or Zesty Hot from Bob Evans would be great!
  • Add some fresh bell peppers or even jalapenos if you like some heat.
  • You can use a bag of frozen corn instead of canned.
  • I used Honey Gold Potatoes, but baby reds or russet would work, just wash and chop them into cubes (yielding about 4-5 cups)
