I am always trying to come up with new crock pot ground beef recipes because they are budget friendly and my family members are beef eating machines. We generally buy a part of a cow every year so rely heavily on using tons of beef for making dinner easy. I just open our freezer, see what’s left of our stash, and come up with something. I’ve made this soup a few times now and decided it was time to share it with you!

Ingredients Needed for this Slow Cooker Cheesy Beef and Potato Soup

How to make this cheese potato soup with Velveeta

Step 1️⃣: Sauté meat. First brown the ground beef and chopped onions on the stove top over medium heat. Drain.

Step 2️⃣: Add to Slow Cooker. Add the cooked ground beef mixture, cubed potatoes, carrots, garlic, chicken broth, water, salt, pepper, and the beef bouillon cube to the slow cooker. Give everything a stir and cover.

Step 3️⃣ Cook. Set the slow cooker on HIGH for five hours total. (also can cook low 7 hours).

Step 4️⃣: Add the cheese. At 4 hours add in the cubed Velveeta cheese and milk. Cover and finish cooking until Velveeta is completely melted and potatoes are cooked. Stir and serve hot.

We like ours with some oyster crackers and more shredded cheese on top! And you can salt and pepper a little more to your liking!

Additions & Substitutions:

  • Like it spicy? Add a chopped jalapeño or some red pepper flakes!
  • Want to incorporate some more veggies? You can easily add in some chopped celery, or other veggies of choice that you think would work.
  • You can use beef or vegetable brith if you have it, I had chicken broth so thats what I used.

How to store this potato and Velveeta Cheese Soup

Once you unplug the slow cooker, pull the pot out to help cool down faster. Once cooled place into air tight containers and refrigerate. Best enjoyed within 3 days. Want to freeze it? Go for it!

Ingredients
  

  • 1 lb. ground beef
  • 1 small onion chopped
  • 6 small- medium potatoes (about 6 cups) washed and cubed
  • 3 Cloves of garlic minced
  • 1 cup sliced carrots
  • 1 32 oz. Reduced Sodium Chicken Broth
  • 2 cups water
  • 1 beef bouillon cube
  • 1 32 oz. block Velveeta or store brand
  • 1 cup milk
  • salt and pepper to taste

Instructions
 

  • First brown the ground beef and chopped onions on the stove top over medium heat. Drain.
  • Add the cooked ground beef mixture, cubed potatoes, carrots, garlic, chicken broth, water, salt, pepper, and the beef bouillon cube to the slow cooker. Give everything a stir and cover.
  • Set the slow cooker on HIGH for five hours total. (or if non-programmable, cook on high 4 hours and proceed to next step).
    Note: can also cook on low 7-8 hours.
  • After 4 hours add in the cubed Velveeta cheese and milk. Cover and finish cooking (1 hour longer) or until Velveeta is completely melted and potatoes are cooked.
  • Stir and serve hot with some oyster crackers and shredded cheese if desired.
