I hope everyone had a great Easter! Easter weekend is a big weekend for us at the restaurant so I have been busy. I made these Slow Cooker Cilantro Lime Chicken Tacos for a quick meal the other day. What better way to throw a meal together than in the slow cooker. Dump the ingredients, shred chicken, then assemble tacos. BOOM DONE. Oh did I mention- just 6 ingredients.
We are coming into the season where we don’t want to turn the oven on and keep the house cool. And if you don’t feel like barbecuing the slow cooker is a great thing to have around! I generally only use the Slow Cooker for all in one meals like my Spicy Chicken Tortilla Soup or Pot Roast. I hate extra steps. That is why I decided to make these Slow Cooker Cilantro Lime Chicken Tacos. Just throw it in and make tender juicy cooked chicken for tacos!

How to make chicken tacos in the slow cooker
This recipe is very simple, first start by adding the chicken, lime juice, salsa, cilantro, and chili powder to the slow cooker. Cook on low 4-5 hours or on high for about 2-3 hours until the chicken reaches an internal temperature of 165 degrees F.
Once finished cooking shred the chicken I like to use these meat shredders. If you are avoiding the carbs this would be great served over lettuce for a salad as well!
Then serve the chicken tacos with some rice, guacamole, chips & queso, hot sauce, sour cream, and cheese! Or whatever your favorite toppings are.

Equipment
- Slow Cooker
Ingredients
- 1.5 lb boneless chicken breast
- 1 lime juiced
- 2 tbsp cilantro
- 1/2 tsp chili powder
- 1 cup salsa
- 1 cup water
- tortillas
Instructions
- Spray slow cooker with nonstick spray.
- Add chicken then cut lime in half and squeeze over chicken.
- Add chili powder, cilantro, salsa, and water.
- Cover and cook on high 2.5 hours or low 4 to 5 hours.
- Once cooked, shred chicken.
- Assemble tacos in tortillas with toppings of choice (cheese, sour cream, salsa, hot sauce, cilantro)
Notes
You could also make taco salads, serve over Spanish rice, or make enchiladas, too!

These are my favorite! And if you want to take the heat up a few notches, sub out the salsa and water for a 7 oz. can of chipotle salsa and a 15 oz. can of Mexican stewed tomatoes blended together. Thanks Stef!
