A few weeks back we purchased a part of a cow. Needless to say I have been coming up with new meals with ground beef. I also have been trying to utilize my slow cooker more often now that I am home. I don’t like it for too many meals except for stews and chili but it is nice to toss a meal together in the afternoon and have it ready and cleaned up for dinner. There aren’t too many Crock Pot meals with ground beef around. I am not sure why so I knew I could create a slow cooker ground beef recipe that is easy and family friendly.

I used white rice because I had a large bag of it. Its nice in the slow cooker because it cooks versus having to make it separately. So basically you need to make the taco meat and then add the ingredients to the slow cooker. Of course you could easily cook/ warm all of the ingredients stove top, too but this Crock Pot Taco casserole eliminates a few steps.
Why we like ground beef and rice recipes
With the cost of groceries right now, we have been trying to make things go a little further and make our meals more filling. Ground beef and rice recipes make a perfect hearty dinner. The starch from the rice is more filling, ground beef is often easier on the wallet compared to other cuts of meat. Then I threw in some black beans (on half) for some more protein and fiber.

How to make these Ground Beef Taco Bowls in the Slow Cooker
First brown your ground beef, drain and add the taco seasoning packet with water. Then in the slow cooker add in the white rice and the water. Top with the ground beef mixture.
Then spoon the salsa on top of the ground beef and spread. Then layer with the southwest corn, black beans (if using), and cheese.
Cover and cook on HIGH for about 2.5-3 hours or low 4-5 hours! *note if cooking on low- check it at around 3 1/2 hours so it doesn’t dry out.
What topping to add to these easy taco bowls?
Then serve with additional salsa, sour cream, hot sauce, or cilantro if desired! I love some heat so you can add fresh jalapeno, too! Like queso? Spoon some of that on top!
These taco bowls are great for meal prep too. Just pack the meal up in some containers for grab and go meals during the week, too!
Additions & Substituitions:
- Brown rice or Spanish rice could easily be swapped out.
- Like to add some peppers or onions? Go for it!
- Jalapenos, poblano peppers, or even green chiles would be tasty too!

Slow Cooker Ground Beef Taco Bowls
Equipment
- 1 Slow Cooker
Ingredients
- 1 lb ground beef
- 1 packet low sodium taco seasoning plus water
- 1 1/2 cups white rice
- 1 1/2 cups water
- 1 cup salsa
- 1/2 can of black beans or full (drained and rinsed)
- 1 15 oz. can southwest style corn drained
- 1 1/2 cups of Shredded Mexican Blend cheese
Instructions
- First brown your ground beef over medium heat, drain any grease and add in the taco seasoning and water. Stir.
- In the slow cooker add in the white rice first, water, and then add the ground beef mixture on top of the rice.
- Then spread the salsa on the top of the meat, then add the corn and black beans.
- Top with cheese, cover and cook on HIGH for about 2.5-3 hours until rice is tender.Cooking times may vary according to your appliance. *If cooking on low 4-5 hours NOTE: check around 3 1/2 hours).
- Then spoon into bowls and add more salsa, sour cream, or toppings of choice.

This was horrible a gummy pot of rice what a waste of money and yes i followed recipe, threw the whole mess away.
Sorry you thought so. All slow cookers cook differently. I have made this several times and recommend cooking on HIGH for the rice to cook properly and keeping an eye for when it’s ready. Since the rest is just letting the flavors combine. And it’s just a budget friendly dinner that can be spruced up with toppings- nothing too fancy.

Is this 1.5 cups of uncooked white rice or cooked white rice?
yes! uncooked the liquid will cook it in the slow cooker.
