Southwestern Style Cheesy Potatoes

Looking for a spin on the classic cheesy potato casserole? Try my Southwestern Cheesy Potatoes!! These are so easy, tasty, and different! I make these Southwestern Cheesy Potatoes for Easter, Christmas, and sometimes to take camping because they freeze well, too. This casserole is so easy, I literally make it right in my 9×13 Pyrex dish. 

I have always loved cheesy potatoes and never knew how simple they are to make!  We like a little spice added to everything so this version has some peppers added for a kick! So if you can’t handle it- 86 the jalapenos!

How to make these Southwestern Style Cheesy Potatoes

First start by chopping up your onions, red bell pepper, and jalapeno. Then mix with the hash browns, sour cream, cream of chicken, and some of the cheese right in the pan.

Then sprinkle some cheese on top.

Then add some crushed tortillas to the top.

And then bake at 350 for about 40-50 minutes until everything is heated throughout and the cheese is melted.

Serve hot with your favorite meal! Enjoy 🙂

Can I use other potatoes

For this cheesy hashbrown casserole you can use the diced potatoes or even the Potatoes O Brian that already has peppers and onions in it. That makes it even easier!

Is it fine if the hash browns are still frozen!?

Yes, I usually just pull them out while the oven in preheating and I am prepping everything else. Just bake a little longer if needed!

What else would be good in this dish?

You could add different peppers, corn, tomatoes, cajun seasoning…whatever else you like!

Want to make smoked cheesy potatoes?

You can make these on your grill or smoker, too! Use an aluminum pan or large cast iron skillet if you would prefer. Follow the instructions and add to the smoker and smoke at 225 Degrees F for about 2 hours until hot throughout. Can sprinkle with some All purpose BBQ rub, too!

This is a great spin on the classic cheesy potatoes casserole! Peppers, onion, and tortilla add extra flavor.

Servings 10 servings

Ingredients
  

  • 1 30 oz bag frozen hash browns or Potatoes O Brian and skip the onion/ bell pepper
  • 2 cups colby jack cheese divided
  • 1 10.5 oz can cream of chicken
  • 8 oz sour cream
  • Salt and pepper
  • 2 jalepenos diced
  • 1 red pepper chopped
  • 1 small onion chopped
  • 1-2 cups crushed tortilla chips

Instructions
 

  • In 9×13 baking dish add the hash browns, cream of chicken, sour cream, peppers and onions and 1 cup of cheese.
  • Mix well and then top with more cheese and tortilla chips.
  • Bake at 350 for about 40-50 minutes or until hot throughout and cheese is melted on top.

Grill/Smoker Instructions

  • Follow all the steps above and place on smoker and let smoke at 225 degrees F for about 2 hours until hot throughout. Can sprinkle with all purpose BBQ Rub, too. (can use aluminum pan or large cast iron as well).
