I really only like to use the slow cooker for all in one meals such as my Pot Roast or my Slow Cooker Meatball Lasagna. So I wanted to create a soup where everything cooks together with no extra steps. This Spicy Slow Cooker Chicken Tortilla Soup recipe is just that.
Why I love slow cooker chicken recipes
The chicken cooks to perfection with the other seasonings and ingredients to make a flavorful broth. A little spicy but just top it with some sour cream or spicy chipotle crema to offset the heat!
You can also add in other vegetables to customize this soup to your family’s liking. Black beans would be great but my husband doesn’t like them so we just left them out. We liked this soup recipe just as it was and I promise it does not lack in any flavor! Top it off with some tortilla chips and cheese for an extra layer of flavor.
No crock-pot? No problem. While crock-pots, also known as slow cookers, can often be found second-hand or on sale at the department and big box stores, this soup can also be made without the use of one. Read below for instructions on how to convert this recipe to the stovetop.
How to make this Spicy Chicken Tortilla Soup in the Slow Cooker
This slow cooker chicken soup is super easy to make. Basically all we do is toss all of the ingredients except for the lime juice into the slow cooker then…”Set it and forget it”. In your slow cooker, add in the chicken breasts, chicken stock, onion, garlic, diced tomatoes with green chiles, chopped jalapenos, and seasonings.
Give it a stir and then cover and set to low cook for 3 hours. Check the internal temperature of the chicken and if not ready, cook for up to another hour. Once the chicken is at least 165 degrees, remove from the broth and use two forks or meat claws to shred the chicken.
Then return the shredded chicken back to the slow cooker and add salt to taste and the lime juice. Stir it all up and serve hot! We topped ours off with this Easy Spicy Chipotle Cream, cheese, tortilla chips, cilantro, and avocado. ENJOY!!!!!
Cooking this Spicy Chicken Tortilla Soup on the Stove Top
To make this soup on the stove top, add all of the ingredients (except the lime juice). Bring to a boil and let boil about 15 minutes until the chicken is cooked through. Then take the chicken out and shred, return to pot, and stir in lime juice and salt to taste.
