Looking for another easy healthy (ish) Air Fryer recipe to add to you weeknight lineup? Try these Air Fryer Fajita Stuffed & Smothered Chicken. Just a few ingredients, easy prep,quick cook time, and easy clean up!

Air Fryer Fajita Stuffed & Smothered Chicken cut in half

Like I said before I think I have been eating better now that we have a Ninja Foodi/Air Fryer. We really don’t cook that much chicken but I have been making it more and more in the Air Fryer because its fast and like experimenting in it. I had a pack of tri color peppers so decided to dice those up and created these Air Fryer Fajita Stuffed & Smothered Chicken breasts.

First start by making a “pocket” in the chicken breasts by cutting a slit in the sides. Then brush with olive oil and dip in the fajita seasoning.

Then you dice up the peppers and mix with the shredded cheese.

Then spoon the cheese and pepper mixture into each chicken breast and close and secure with toothpicks. There will be extra mixture leftover reserve it to put on top at the end .

Then add to the Air Fryer basket and cook at 375 for 20 minutes. Then remove toothpicks and add the reserved pepper mix (whatever didn’t fit into the chicken) over the cooked chicken and cook another 5 minutes.

Serve with all of your favorite toppings..hot sauce, sour cream, salsa!! Enjoy!

Air Fryer Fajita Stuffed & Smothered Chicken

Equipment

  • air fryer or Ninja Foodi

Ingredients
  

  • 4 Boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 1 1 oz packet fajita seasoning
  • 1 yellow bell pepper
  • 1 orange pepper
  • 1 jalapeno
  • 1 cup colby jack cheese

Instructions
 

  • Make a slit in the side of chicken breasts creating a pocket.
  • Brush olive oil on chicken and add fajita seasoning in a small bowl and dip each chicken breast covering both sides.
  • Dice bell peppers and jalapeno and add to a medium bowl.
  • Add cheese to the peppers and mix.
  • Spoon pepper mix into chicken breasts and close securing with toothpicks. Reserve any leftover pepper mix.
  • Place into Air Fryer basket and set temperature to 375 and cook for 20 minutes.
  • Remove toothpicks and add remaining pepper and cheese mixture over top of the stuffed chicken breasts and cook for another 5 minutes.

Notes

Serve hot with toppings of choice, sour cream, salsa, hot sauce, cilantro!
*NOTE: cook times may vary. Cook until chicken internal temp is 165
