Why use cake mix for sugar cookie bars?

Okay to be honest, I can’t stand making cookie dough OR homemade cakes. I hate beating butter and having tons of ingredients out. So to make a few shortcuts, cake mix and sugar cookie mix come together perfectly to make just the right texture for these sugar cookie bars. I made a version of these for my mom’s birthday with pink sprinkles and thought it would be a fun idea for some Irish ones!

Ingredients needed for St. Patrick’s Day Sugar Cookie Bars

🍀 Sugar Cookie Mix- Make sure to grab the 1 lb bag not the smaller size sometimes sold at the $1 store.

🍀Yellow Cake Mix –
I used yellow but you can also use white cake mix, too!

🍀Butter-
I use unsalted but it doesn’t really matter.

🍀Vanilla Extract
If you don’t have it that’s okay just adds a little more vanilla and homemade flavors!

🍀Eggs-
3 eggs are just the right amount.

🍀Can of Cream Cheese Frosting
I like the taste of cream cheese frosting but you can just grab vanilla or white, as well. OR you can make your own frosting with butter, powdered sugar, cream cheese, and vanilla!

🍀Green Food Coloring
just a few drops to achieve the perfect green!

🍀Green Sprinkles
– Green or gold are perfect for St. Paddy’s day!

How to make these St. Patrick’s Say Sugar Cookie Bars (with cake mix)

Step 1️⃣: Mix ingredients. In a large mixing bowl, combine the cake mix, sugar cookies mix, melted butter, eggs, and vanilla. Mix with a spatula until batter forms.

Step 2️⃣ Spread. Pour batter into and sprayed 9×13 baking dish and press down until formed to the pan.

Step 3️⃣: Bake. Bake at 350 degrees F for about 30 minutes until golden brown. Remove from oven and let cool before frosting.

Step 4️⃣:Make green frosting. Remove the cap and foil from the can of frosting and microwave for about 20 seconds until stir-able. Add 2-3 drops of food coloring to your favorite shade of green. Mix well.

Step 5️⃣: Frost. Pour the green frosting to the cooled cookie bars and spread around. Top with green sprinkles.

Storing these Irish sugar cookie bars

If you have a lid to your pyrex dish, you can just cover with that. Otherwise cover and seal well or place in air tight container. You can leave these cookie bars at room temperature for about 5 days.

  • 1 17 oz. packet of sugar cookie mix
  • 3 eggs
  • 2 sticks butter melted
  • 1 tsp vanilla extract

For the frosting

  • 1 can cream cheese flavored frosting
  • 2-3 dops green food coloring
  • green sprinkles

Instructions
 

  • In a large mixing bowl, combine the cake mix, sugar cookies mix, eggs, melted butter, and vanilla. Mix with a spatula until batter forms.
  • Pour batter into and sprayed 9×13 baking dish and press down until formed to the pan.
  • Bake at 350 degrees F for about 30 minutes until golden brown. Let cool.
