Why use cake mix for sugar cookie bars?
Okay to be honest, I can’t stand making cookie dough OR homemade cakes. I hate beating butter and having tons of ingredients out. So to make a few shortcuts, cake mix and sugar cookie mix come together perfectly to make just the right texture for these sugar cookie bars. I made a version of these for my mom’s birthday with pink sprinkles and thought it would be a fun idea for some Irish ones!

Ingredients needed for St. Patrick’s Day Sugar Cookie Bars

How to make these St. Patrick’s Say Sugar Cookie Bars (with cake mix)
Step : Mix ingredients. In a large mixing bowl, combine the cake mix, sugar cookies mix, melted butter, eggs, and vanilla. Mix with a spatula until batter forms.
Step Spread. Pour batter into and sprayed 9×13 baking dish and press down until formed to the pan.

Step : Bake. Bake at 350 degrees F for about 30 minutes until golden brown. Remove from oven and let cool before frosting.
Step :Make green frosting. Remove the cap and foil from the can of frosting and microwave for about 20 seconds until stir-able. Add 2-3 drops of food coloring to your favorite shade of green. Mix well.
Step : Frost. Pour the green frosting to the cooled cookie bars and spread around. Top with green sprinkles.

Storing these Irish sugar cookie bars
If you have a lid to your pyrex dish, you can just cover with that. Otherwise cover and seal well or place in air tight container. You can leave these cookie bars at room temperature for about 5 days.
