I have a new super easy breakfast casserole for you all! Spring is in the air and strawberry season is around the corner so I decided to make this Strawberry Cinnamon Roll French Toast Casserole! Just a few ingredients, fresh strawberries, and perfect for Sunday Brunch, Mother’s Day, or any day of the week!
I know a lot of you liked my Bacon Cinnamon Roll French Toast Casserole so I started thinking of a different version I could make. This Strawberry Cinnamon Roll French Toast Casserole is even easier to make and the whole family can enjoy it. Sofie kept saying, “This is gonna be so good”. And then when we ate it, “Yummm…” So it is safe to say that this is kid friendly, too.
I don’t make breakfast too often, so if I do it has to be easy. Some of our favorites are my Sausage Egg & Cheese Stuffed Biscuits to last all week long or sometimes Sofie and I just make a smoothie. This strawberry French toast casserole was easy enough that I will definitely make it more often for us.
What you need for this Strawberry Cinnamon Roll French Toast Casserole
- Cinnamon Rolls
- Fresh strawberries
- Eggs
- Milk
- Vanilla *OPTIONAL
Yes that easy 🙂 Of course you can do blueberries or whatever other fruit sounds good to you, too!

How to make this easy Strawberry Cinnamon Roll French Toast Casserole
First you will want to cut the cinnamon rolls into quarters (or rip them into pieces). And also chop up your fresh strawberries.
Then in a medium mixing bowl whisk together your eggs, milk, and vanilla if using it.
Next add in the cinnamon roll pieces and and the strawberries and mix them all around so they are coated.
Pour into a greased 8×8 baking dish or similar. I used a deep casserole dish so I think it took a little longer to cook.
Bake at 375 for about 30-40 minutes until cinnamon rolls are golden brown and eggs are cooked. Then drizzle the icing that comes with the cinnamon rolls over the entire dish.
Cut and serve with more fresh strawberries, whipped topping, or warm syrup!!

What to serve with this Strawberry Cinnamon French Toast Casserole
If you are having brunch, make sure to whip up a few Pineapple Screwdrivers for a nice cocktail! Also for a more hearty savory dish you can make my Biscuits & Gravy Breakfast Skillet or Bacon Breakfast Bubble Bake! This serves about 4-6 pieces so if it is your main course, just double it and make it in a 9×13 casserole dish and serve with fresh fruit or maybe even some breakfast sausage!

Strawberry Cinnamon Roll French Toast Casserole
Ingredients
- 1 12.4 oz can refrigerated cinnamon rolls
- 1 cup chopped strawberries
- 3 large eggs or 4 smaller eggs
- 1/2 cup milk
- 1 tsp vanilla optional
Instructions
- Cut the refrigerated cinnamon rolls into quarters.
- In a medium mixing bowl combine the eggs, milk, and vanilla.
- Whisk until well incorporated and then add in the cinnamon rolls and chopped strawberries.
- Mix until all is coated and pour into an 8×8 baking dish (or similar).
- Bake at 375 degrees for about 30-40 minutes until golden brown and center is cooked.
- Drizzle the icing that comes with the cinnamon rolls all over the top.
- Cut and serve hot with extra strawberries, syrup, or even whipped topping!
