We purchased half of a pig from my cousin a few months back, so my next mission is to come up with some new pork recipes. I don’t cook too much with pork..although I do love me some smoked pork belly burnt ends and homemade bacon.… What I do like about cooking with the ground pork though, is that it already has some flavor to it without adding too much to season it. So here is to something a little different!

This Super Easy Ground Pork Ramen is perfect for weeknights when you don’t want to run to the store. Most likely- you have most of these ingredients in your pantry/fridge. If not, add it to the shopping list for next week!

I honestly looked in my cupboard, saw that I had ramen…peaked in the fridge…saw that I had soy sauce and carrots. That is how this recipe came about. I used ground ginger (fresh would be fabulous) and a few other ingredients. This ramen recipe can easily be customized to your family’s needs. If you want to toss in more veggies, go for it. Like it spicy? Add some sriarcha during the cook. I wanted my kids to eat this, so I saved the spicy for the topping instead.

How to make this Pork Ramen Stir Fry

First start by adding some oil to your sauté pan or skillet and start cooking the pork, carrots, and garlic. Once browned, add in the ground ginger, brown sugar, red pepper flakes, and soy sauce. Give it all a stir and let simmer for about 5 minutes.

Next add in your cooked ramen noodles, give everything a stir. The noodles will absorb the majority of the liquid. Then simply push the mixture to the side and add in the eggs. Let them cook a bit, break them up, and once mostly cooked stir them around into the noodles.

Time to serve! This is great with some added green onions (if by chance you have them), sesame seeds, more red pepper flakes, and sriracha sauce on top! ENJOY!

(Note* I do not know how to use chop-sticks….for pics only! LOL)

Storage & Re-heating Instructions

If you don’t finish it, wait until it cools and store in an air-tight container in the refrigerator. To re-heat, add a couple of dashes of soy sauce before microwaving.

Super Easy Ground Pork Ramen

This Easy Ground Pork Ramen dish comes together quickly for a budget friendly dinner perfect for the whole family.

Ingredients
  

  • 1 tbsp olive oil
  • 1 lb. ground pork or beef
  • 1/2 cup shredded carrots about 1 medium
  • 1 clove of garlic minced
  • 1 tsp ground ginger or fresh
  • 1/4 cup brown sugar
  • 1/2 cup low sodium soy sauce
  • dash red pepper flakes optional
  • 3 packages Ramen Noodles (seasoning removed) cooked and drained
  • 2 eggs

Instructions

  • Next add in your cooked ramen noodles, give everything a stir. The noodles will absorb the majority of the liquid. Then simply push the mixture to the side and add in the eggs.
  • Let them cook a bit, break them up, and once mostly cooked stir them around into the noodles.
  • Serve with favorite toppings such as sriracha sauce, green onions, more red pepper flakes or sesame seeds.

  • to re-heat just add in a bit more soy sauce to the noodles.
