It is coming in to that time of year, my favorite time of year. During the Fall casseroles, soups, and warming food make us happy. Well I love making different versions of chili, so I created this Turkey Chorizo Mexican Chili. I saw some chorizo flavored ground turkey and thought I bet that would be good in chili, and it was!
I made this Turkey Chorizo Mexican Chili on the stove letting it simmer for about an hour. Of course you can make it in the slow cooker or your Instant Pot as well. I wanted to use some of our hot peppers from the garden, so it was a little spicy. So use what you like. I used one green bell pepper, two jalapenos, and one large banana pepper. I also used a handful of cherry tomatoes from the garden (optional). This does make a large pot of chili because I like to freeze half or feed our parents, too. So if you are looking just to feed a couple people, cut the recipe in half.
How to make this Turkey Chorizo Mexican Chili
Easy as usual, in a large stock pot brown the meat, add your peppers and onion. Once veggies are fragrant and the meat is mostly cooked, add the packet of taco seasoning, canned tomatoes, sauce, and corn.
If you like beans you can add black beans (I would get yelled at if I did this and didn’t feel like grinding them up to hide them HAHAH).
AND as always for me 1 can of BEER. (well right now we have Dos Equis Amber on tap, so I used that ;))
Let simmer covered at least an hour. Top with tortilla chips, cheese, and sour cream!

Turkey Chorizo Mexican Chili
Ingredients
- 2 1 (LB) rolls of Chorizo Seasoned Turkey Sausage (or regular chorizo)
- 2 jalapenos
- 1 banana pepper chopped
- 1 onion chopped
- 1 green pepper chopped
- 1 29oz can tomato sauce
- 1 28oz can crushed tomatoes
- 1 29oz can diced tomatoes with green chiles
- 1 15.25oz can corn drained
- 1 pkg taco seasoning
- 12 oz light beer or amber ale
Instructions
- In a large stock pot, brown chorizo sausage and peppers and onions until meat is mostly cooked and vegetables are fragrant.
- Drain grease and return to pot.
- Add taco seasoning and stir.
- Add canned tomatoes, sauce, can of corn, and beer.
- Let simmer covered for at least an hour.
