Ready for a super easy new recipe to try on your Blackstone or flat top grill? This Fiesta Taco Tortellini on the Blackstone comes together quickly with just a few ingredients for the perfect weeknight dinner the whole family will love! Tender tortellini, ground beef, taco flavors, corn, and salsa… need I say more?

Of course if you don’t have a flat top grill, you can also easily make this inside the house on the stove top in a skillet as well! I just love being able to cook all of the ingredients at the same time on a large surface.

I love finding ways to change up Taco night at our house. I like to make cheesy taco potatoes, taco spaghetti, and more! If you have been following along you know that I do love cooking pasta on the Blackstone, too! So, I knew that I could concoct a little something different the other night. This turned out great, cooked quickly, and everyone liked it.

Ingredients Needed for this Fiesta Taco Tortellini on the Blackstone (or flat top)

🌮 Ground Beef – I used 1 lb. ground beef, could also swap for ground turkey or chicken!

🌮 Chili Powder-
I just used a little seasoning instead of taco packets but can use a taco seasoning or fajita seasoning if you have it.

🌮 Ground Cumin
– This is where taco seasoning gets that strong flavor. So same as above.

🌮 Cheese Tortellini– I just used 2 packs of tortellini from Aldi they are in the dry pasta section. You can use refrigerated or even frozen ones.

🌮 Fiesta Corn/ Southwestern Style Corn– I had some frozen for a recipe that I didn’t use the rest of so about 1/2 a can but if your family enjoys corn, you can use the whole can.

🌮 Salsa – This makes up the sauce so about 2 cups is what I used. Feel free to use what every flavor salsa you enjoy!

🌮 Cheese
– Gotta have some cheese sprinkled on top!

How to make this Taco Tortellini on the Blackstone

Step 1: Cook the beef. On one side of the surface over medium heat, add on the ground beef. Sprinkle with the chili powder and ground cumin.

Step 2: Cook the tortellini. On the other side of the surface, add on the tortellini and squirt with water often until starting to get tender.

Step 3: Add in corn. Once the tortellini is almost cooked, add in the corn and toss around.

Step 4: Combine. When the tortellini is done, toss all of the ground beef and tortellini mixture together and add in the salsa. Toss until salsa is warmed up.

How to make taco tortellini on the blackstone

Step 5: Serve. Top with cheese and serve hot. You can garnish with chopped green onions, sour cream, hot sauce or other toppings of choice! Enjoy!

  1. Like is spicy? Add in a chopped jalapeño!
  2. You can also use ground chorizo for a fun/spicy twist!

This Fiesta Taco Tortellini is an easy dinner that comes together quickly on the Blackstone or flat top grill! Just seven ingredients, loaded with flavor, and a dish the whole family will enjoy!

Ingredients
  

  • 1 lb ground beef
  • Cumin to taste
  • Chili Powder to taste
  • 2 8 oz. Packages of Cheese Tortellini
  • 1/2 can Fiesta Corn or Southwestern Style, drained
  • 1 1/2-2 cups Salsa
  • 1 cup Shredded Mexican Cheese or Colby jack
  • 1 green onion for garnish

Equipment

  • 1 Flat Top Grill or Griddle

Method
 

  1. On one side of the surface over medium heat, add on the ground beef. Sprinkle with the chili powder and ground cumin.
  2. On the other side of the surface, add on the tortellini and squirt with water often until starting to get tender.
  3. Once the tortellini is almost cooked, add in the corn and toss around.
  4. When the ground beef and tortellini is done, toss all of the ground beef and tortellini mixture together and add in the salsa. Toss until salsa is warmed up.

Stove Top Instructions
  1. Cook the tortellini according to package instructions and set aside.
  2. Cook the ground beef with seasoning until browned and drain.
  3. Add in the corn, the cooked tortellini, and salsa and toss to combine. When everything is warmed throughout, serve and top with cheese.
