I have been utilizing my slow cooker a bit more often for weeknights that we have something going on. So this meal is perfect for those kind of nights. Toss everything in, give it a stir, and let the slow cooker warm everything up. We made this a few weeks back on dance class night. It was nice- I threw it together before the kids got home from school then we came in the house after being gone, and dinner was done. It is pretty budget friendly, too. Cheesy potatoes and sausage? Can you go wrong?

🧀 Potatoes O’Brien with Onions and Peppers – Frozen works perfectly, saving you prep time while still giving flavor and texture.

🧀 Beef Smoked Sausage – Cut into 1-inch pieces. Adds a smoky, savory punch to the dish. Or grab whatever flavor you like. If your family is hungry you may want to cut up two links.

🧀 Mild Cheddar Cheese – Shredded, divided. Part goes inside the slow cooker for melty goodness, part goes on top for a golden finish.

🧀 Condensed Cream of Mushroom Soup – The creamy base that brings all the flavors together.

🧀 Sour Cream – Adds richness and a little tang, making the casserole extra comforting.

🧀 Salt & Pepper – Just enough to enhance all the flavors without overpowering.

Fresh garlic (optional) I used 1 clove

Cajun seasoning (optional)- This just gives it a little kick and flavor.

How to Make Slow Cooker Smoked Sausage and Potatoes

Step 1: Prep the Slow Cooker and Ingredients. Start by greasing your slow cooker with a little oil or nonstick spray. Cut the smoked sausage into 1-inch pieces.

Step 2: Layer Everything Together. Add the potatoes, sausage, and some of the shredded cheddar cheese to the crockpot. Give it a gentle toss so everything is mixed just right — no need to overthink it.

Step 3: Make It CreamyAdd in the condensed cream of mushroom soup, sour cream, salt, pepper, garlic and cajun seasoning if using. Gently mix everything so it’s evenly coated.

Step 4: Top and Cook. Sprinkle the remaining cheddar cheese on top, cover, and cook on high for 3–4 hours or low for 6–7 hours. You want the potatoes tender but not mushy. When it’s done, serve it warm and dig into a comforting, cheesy, one-pot meal!

Additions & Substitutions

  • Swap the cheddar for pepper jack!
  • Add a chopped jalapeño for some spice!
  • Use turkey or chicken sausage for a lighter version.

Ingredients
  

  • 1 28 oz. bag frozen Potatoes O’Brien with Onions and Peppers
  • 1 12 -14 oz. smoked sausage link (or 2 if desired) sliced into 1 inch pieces
  • 1 8 oz. cheddar cheese shredded – divided
  • 1 10.5 oz. can condensed cream of mushroom soup
  • ½ cup sour cream
  • ½ tsp salt
  • ½ tsp pepper
  • 1-2 cloves garlic, minced optional
  • cajun seasoning optional

Method
 

  1. Spray slow cooker with non-stick spray or olive oil.
  2. Add in the potatoes, sliced sausage, and some of the shredded cheddar cheese to the crockpot. Give it a gentle toss so everything is mixed.
  3. Add in the condensed cream of mushroom soup, sour cream, salt, pepper, garlic and cajun seasoning if using. Gently mix everything so it’s evenly coated.
  4. Sprinkle the remaining cheddar cheese on top, cover, and cook on high for 3–4 hours (my consistency was good at 4 hours) or low for 6–7 hours.
  5. Spoon into bowls and enjoy.
