Once in awhile I crave some fresh vegetable recipes, but don’t make them as often as I would like because my husband doesn’t eat the same as I do. When I do create these recipes, they are usually my lunch for myself for a few days. These Air Fryer Veggie Stuffed Zucchini Boats turned out great! I figured I would share this recipe as your zucchini start to produce in the garden!
I used to only bake with zucchini but I have broadened myself into healthy meals like my Three Ingredient Salsa Zoodles and my Spicy Taco Stuffed Zucchini! Actually I made these Air Fryer Veggie Stuffed Zucchini Boats last year after detoxing from our camping trips. When we got home we had loads of fresh zucchini, tomatoes, and peppers growing. So I got to experimenting! You can definitely bake these too but the zucchini cooked quickly and to perfection in the Air Fryer! I used our Ninja Digital Air Fryer Oven which we love!
This stuffed zucchini recipe is a little different because there isn’t any meat in here. So if you are looking for a meatless option, this is the recipe for you! I also used a little cheese on top, but if you are vegan go without! Fresh, simple ingredients will have you feeling great after eating these vegetable stuffed zucchini boats!
What you need for these Air Fryer Veggie Zucchini Boats
- Zucchini
- Roma Tomato
- Jalapeno
- Red Bell Pepper
- Seasonings
- Cheese (optional)
- Olive Oil

Is Zucchini good for you?
Zucchini over the years has become one of my favorite vegetables to cook and bake with! Zucchini is loaded with many nutrients, vitamins and minerals! High in B Vitamins (which I lack in), antioxidants, fiber, and can help support your vision and immunity!
How to make these Vegetable Stuffed Zucchini in your Air Fryer
First start by washing and and cutting the zucchini in half. Then you will want to take a spoon and scoop out the seeds and discard. Then make the filling by cutting up the tomato, jalapeno, and red bell pepper.
Add in the seasonings and cheese and mix it all together. Spoon the mixture into the zucchini and place onto the Air Fryer basket or if you are baking, a baking sheet.
Then set you Air Fryer to 385-390 degrees and “Air Fry” for about 12 minutes. The zucchini still had some texture and the vegetables were cooked just right for my liking. If you want the zucchini a little softer, cook a little longer at a little lower temperature.
I served mine up with some salsa, guacamole, and sour cream!

Air Fryer Veggie Stuffed Zucchini Boats
Equipment
- Air Fryer or Oven
Ingredients
- 2 medium sized zucchini
- 1 tomato (Roma or similar) chopped
- 1 jalapeno diced
- 1 red bell pepper diced
- 1/2 tsp garlic powder or fresh garlic
- 1/2 tsp chili powder
- salt & pepper to taste
- 1/2 cup shredded Mexican style cheese
- olive oil
Instructions
- Wash the zucchini and slice lengthwise down the center.
- Use a spoon to scoop out the center of the zucchini removing all of the seeds.
- In a bowl combine the tomatoes, red pepper, jalapeno, seasonings, and cheese.
- Mix until all the ingredients are tossed in seasonings.
- Then spoon the mixture into the center of each zucchini.
- Place in the Air Fryer basket or tray and spray or brush with olive oil.
- Cook at 385-390 for about 12 minutes.
- Serve hot with toppings of choice!!
