So this is one of those quick weeknight dinners I have been making for years. My husband loves them and I CAN SNEAK SOME VEGGIES IN. My older daughter likes them, too (she calls them meat muffins). We are pretty much suckers for anything with biscuits….breakfast casseroles, donuts, taco bubble bake, and more! They are great to keep in the fridge for nights where you need a quick idea.
I sometimes make a batch of these and wrap and freeze in two’s so that my husband can pack them up for his lunch to re-heat. So this is a great recipe is you ever do that kind of thing…lol
Ingredients You’ll Need for These Cheeseburger Biscuit Cups

| 🍔 Ground Beef – This is the base of the whole recipe. It cooks fast and soaks up the BBQ sauce perfectly. Can also swap out ground turkey for a leaner version. 🍔 Shredded Carrots – A small amount goes a long way. They blend right in and add a little extra something without being obvious. You can buy matchstick ones or shred your own. 🍔 Chopped Onion – Adds flavor and balance. If you’re cooking for picky eaters, feel free to keep the pieces small or even use the grater to make them finer as well. 🍔 BBQ Sauce – This is where that classic BBQ burger flavor comes from. Use whatever brand you already love. 🍔 Shredded Colby or Mild Cheddar Cheese – Melty, cheesy, and exactly what you want on top of these biscuit cups. 🍔 Refrigerated Biscuit Dough – Pressed into the pan to form the biscuit cups that hold everything together. How to Make BBQ Burger Biscuit Cups
Step 1: Prep the pan and biscuits. Preheat your oven to 350°F. Spray a muffin pan with non-stick spray or line it with liners (for easier clean up). Split each biscuit in half so you have 16 pieces, then press them into the muffin pan to form little biscuit cups. If you want to just make 8 thicker ones-go for it and can use a muffin tin.
Step 2: Cook the beef mixture. Add the ground beef to a skillet over medium heat along with the shredded carrots and chopped onion. Cook until the beef is fully browned and everything is cooked through.
Step 3: Add the BBQ sauce. Drain off any excess grease, then stir in the BBQ sauce. Give it a good mix so all that beef gets coated.

Step 4: Fill the biscuit cups. Spoon the BBQ beef mixture evenly into each biscuit cup. It doesn’t need to be perfect—just try to keep them fairly even.
Step 5: Top with cheese. Sprinkle shredded cheese over the top of each cup. Be generous here.
Step 6: Bake. Bake for about 15 minutes, or until the biscuits are golden and the cheese is melted. Let them cool for a few minutes before serving so they hold together nicely.

- Want more flavor? Add some fresh garlic or garlic powder to the beef while it cooks.
