Lemon Pudding Pops
I just love pretty much any lemon dessert. They are refreshing, great for Spring/Summer, and my kids love them too. They always want to make popsicles and last year we started experimenting with homemade pudding pops. We made some Hot Fudge Sundae Pudding Pops and some S’mores pudding pops. They were a hit! And super easy. I had some leftover lemon cookies from making my lemon cookie parfaits, which sparked the idea for these Lemon Cookie Pudding Pops.
Ingredients needed for these Lemon Cookie Pudding Pops
- Lemon Pudding– I used store brand but I would recommend Jell-O to skip any weird after taste. Usually I am all for store brand but for some reason pudding is one of those things that slightly has a different taste.
- Milk– I used 2% to make the pudding since that is what we always have, but whatever you have works.
- Lemon cookies– Store brand lemon cookies are perfect. They are cheap and delicious. Or you can use Lemon Oreos.
Yep that is it! Three ingredients and some freezer time for these lemon popsicles to be ready for a cold delicious treat. Best part? They are easy enough the kids can make the entire thing. Well, might be a bit messy but that’s okay. My daughters had fun adding in the cookie crumbs, licking the spoons, and of course getting to enjoy the final product.
How to Make Pudding Pops
First grab out your popsicle mold. Crush up about 10 cookies (or more to your liking). We just placed them in a bag and used the rolling pin to crush.
Then make the pudding by whisking with the milk until thickened. Fill the molds half way with pudding. Then add in a scoop of the cookie crumbs. Fill the rest of the way with more lemon pudding. Then top them off with another layer of cookie crumbs. Insert the sticks and place in the freezer overnight.
When ready to enjoy, let sit on the counter for 5 minutes before trying to remove the pops. Of course you can run them under hot water, too. Then enjoy!

Lemon Cookie Pudding Pops
Ingredients
- 10 lemon cookies store brand or Lemon Oreos
- 1 3.4 oz. box instant lemon pudding
- 2 cups milk
Instructions
- Place cookies in a ziplock-lock bag and smash with a rolling pin or glass bowl. (Alternatively can use food processor/blender).
- In a medium bowl combine the lemon pudding mix with the cold milk and whisk until thickened (about 2 minutes).
- Fill the popsicle molds half way, then add a layer of the cookie crumbs.
- Fill the rest of the way with the pudding and then finish with another layer of cookie crumbs.
- Place the sticks in and freeze for at least 6 hours or overnight.
- When ready to serve, let sit on the counter for 5 minutes before removing from mold (or run under hot water). Enjoy!
