It is almost March and I love exploring new recipes to help celebrate my Irish heritage. These Simple Irish Oatmeal Muffins turned out so good I knew I had to share them with you! Just slightly sweet for a quick grab and go breakfast but simple enough to be a side to go along some Irish Beef Stew or a bowl of Dublin Coddle!
I ended up snacking on these Simple Irish Oatmeal Muffins throughout the day when I was getting hungry. They are made with just a few pantry staples and oats so I didn’t feel too guilty about eating them either. I originally made these oatmeal muffins to go along with my Easy Cheesy Potato Soup but I liked them just by themselves! So did my little toddler Sofie.
What you need for these Simple Irish Oatmeal Muffins
These oatmeal muffins come together in one bowl with pantry staples!
- Oats
- Flour
- Milk
- Egg
- Vinegar
- Baking Soda & Baking Powder
- Brown Sugar
- Vegetable Oil
- Salt
Why is this oatmeal muffin recipe considered Irish?
Well it is known that in Ireland they make use of their oats generally for Irish Porridge in the mornings. Oats are one of the most important crops in Ireland due to the climate. So adding oats in to various dishes helps make use of these oats! I like to do the same in my Pancakes and even in my Banana Bread recipes!
How to make these Irish Oatmeal Muffins from scratch
First we start by adding the milk and vinegar in a bowl to sour the milk a little. I have never done this before but it wasn’t weird at all so do it! Add the oats and let them soak for a few minutes as you get the rest of your ingredients ready.
Once the oats have softened, mix in the egg, brown sugar, and vegetable oil.
Mix and then add in your dry ingredients (flour, baking soda, baking powder, and salt). Miz until everything combines well.
Then spoon into a muffin pan or I just used my cupcake pan. I made 12 cupcake sized muffins but if you are using a muffin pan they probably make about 8 large muffins.
Bake at 375 degrees for about 15 minutes (if using muffin pan, may cook up to 20 minutes).
Serve and enjoy as a quick snack, breakfast, or as a side to your favorite soups or stews! ENJOY friends.

Oats are one of the healthiest grains on earth! How fun is that? They are loaded with fiber and have many heart healthy benefits! They are a naturally gluten free grain so great for people who are gluten intolerant. Oats also have factors that help reduced blood sugar levels, help lower cholesterol, and help promote digestion in your gut! So that being said I add them in where I can because they disappear and you wouldn’t even know you are eating them!

Simple Irish Oatmeal Muffins
Ingredients
- 1 cup oats
- 1 cup milk
- 1 tablespoon white vinegar
- 3/4 cup brown sugar
- 1/4 cup vegetable oil
- 1 1/4 cup flour
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 egg.
Instructions
- In a medium bowl combine the milk and vinegar to sour the milk.
- Then add the oats and soak for a few minutes until soft.
- Mix in the egg, brown sugar, and vegetable oil.
- Then add in the flour, salt, baking powder, and baking soda and stir until well combined.
- Fill the cupcake pan or muffin tins half full.
- Bake at 375 degrees for 15-20 minutes.
