White Chocolate Raspberry Mini Waffles

Do you have a waffle iron at home? Than you need to make these Raspberry White Chocolate Homemade Waffles. Light, fluffy, and tasty. The kids and adults will love these! They are just sweet enough with fresh raspberries cooked in that you barely need any syrup! These would make the perfect addition to Sunday morning or a holiday brunch.

I was gifted a mini waffle iron last Christmas that has a little snowman on it. So Sofie (and now Stella) and I have been making homemade waffles more often. Last week we made raspberry and chocolate chip and I love the combo of raspberry and white chocolate so we made a batch of these!

Like I said these Raspberry White Chocolate Homemade Waffles are easy enough for any morning but fancy enough for Christmas morning! Of course you can use your favorite boxed mix but homemade pancakes and waffles are super easy to make with pantry staples.

What you need for homemade waffle mix

  • Egg
  • Butter
  • Milk
  • Vanilla
  • Flour
  • Baking Powder
  • Sugar
  • Salt
  • Raspberries & white chocolate chips

This recipe for homemade waffles is simple. Feel free to swap out for strawberries, blueberries, or regular chocolate chips too! Whatever your family enjoys 🙂

How to make homemade waffles

Making waffles at home is easy! First grab a mixing bowl and combine the egg, melted butter, milk, and vanilla. Whisk it up. Then add in the flour, baking powder, sugar and salt. Mix until all is well combined and batter forms.

Next fold in the raspberries and white chocolate chips. Slightly mash the raspberries as you stir. Then once the waffle iron in hot and ready. Spoon the mixture into the iron, close the lid.

Cook for about 2 minutes or until the light turns off. Once its done carefully remove with a fork. Then serve them hot with syrup, more raspberries, or whipped cream and enjoy!

Raspberry White Chocolate Homemade Waffles

These homemade waffles are easy to make with pantry staples. Fresh raspberries and white chocolate chips make these perfect for Sunday mornings or even holiday brunch!
Servings 8 mini waffles

Ingredients
  

  • 1 Egg
  • 1/4 cup 1/4 cup melted butter
  • 1 cup Milk
  • 1 tsp Vanilla
  • 1 cup Flour
  • 1 tsp Baking Powder
  • 1 1/2 tbsp Sugar
  • 1/4 tsp Salt
  • 1/2 cup raspberries
  • 1/4 cup white chocolate chips or regular chocolate

Instructions
 

  • Preheat the waffle iron and spray with non stick spray.
  • Add the egg, melted butter, milk, and vanilla into to a mixing bowl, and stir well.
  • Next stir in the flour, the baking powder, sugar, and the salt.
  • Fold in the fresh raspberries white chocolate chips slightly smashing the raspberries into the mixture.
  • Then spoon the batter into the waffler iron enough to fill the base.
  • Close the lid and cook for about 2 minutes (or when the light goes off) then use a fork to remove the waffle.
  • Serve hot with extra favorite toppings of choice and enjoy!
