These Blackstone quesadillas are especially good when you want something a little different from tacos but still want an easy handheld dinner everyone will eat. I have been making these more often with leftover smoked chicken legs. My older daughter loves them and they do taste great to changes things up. Some nights I keep it simple with literally just the chicken, bbq sauce, and cheese. But for these BBQ Chicken Quesadillas I added some fresh corn and a little onion for some extra goodness.

Ingredients You Need for these Blackstone Quesadillas

Boneless skinless chicken thighs- I chose thighs because they are tender and more budget friendly but you can use breast as well.

✨BBQ rub
– Whatever you have on had works. I used Meat Church Holy Gospel.

✨BBQ sauce
– In this recipe I used a thinner BBQ sauce but use your favorite or whatever you have in the fridge. (and as much as you like).

✨Corn
– I used some fresh sweet corn and cut off of the cob. Canned/ frozen works fine, too.

✨Onion
– just a little to add some flavor and health benefits.

✨Flour tortillas-
burrito size work best

✨Shredded cheese
– such as cheddar, Colby jack, Monterey jack, or a Mexican cheese blend
Oil or butter for the Blackstone if needed

How to Make Blackstone BBQ Chicken Quesadillas

Step 1: Cook the chicken. Start by preheating your Blackstone griddle over low-medium heat. Add a little oil, then place the chicken thighs on the hot griddle. Season with your favorite BBQ rub. Cook the chicken until it is browned on the outside and reaches an internal temperature of 165 degrees F.

Step 2: Cook the corn. While the chicken cooks, add the diced onion and corn to another area of the Blackstone. Cook until the onion softens and the corn gets a little color around the edges.

Step 3: Add BBQ sauce. I drizzle the bbq sauce at this point and then toss the corn and onions into the chicken.

Step 4: Make the quesadilla. To make the quesadillas, place the tortilla down on the Blackstone. Add shredded cheese to one half of the tortilla, then spoon on the BBQ chicken mixture. Add a little more cheese on top (if desired) before folding the tortilla over.

Cook the quesadillas for a few minutes per side, pressing gently with a spatula, until the tortillas are golden brown and crispy and the cheese is melted.

Slice and serve right away with extra BBQ sauce, sour cream, ranch dressing, or your favorite toppings.

Start by seasoning your cubed chicken thighs with your favorite BBQ rub, then cook them in a skillet over medium heat with some olive oil until they are cooked through and reach an internal temperature of 165°F. When its almost finished add in the onion and corn and cook a few minutes longer. Add in the bbq sauce before assembling your quesadillas.

Heat a clean skillet or non-stick pan over medium heat and lightly grease it with butter or oil. Add a tortilla, then layer with shredded cheese and the chicken mixture. Fold and cook for 2-3 minutes per side until the tortilla is golden brown, crispy, and the cheese is melted.

  • 1 1/2 lb. boneless chicken thighs (or breasts) cut into pieces
  • BBQ rub of choice
  • 1/2-1 cup fresh corn kernels (or canned/frozen) as much to your liking
  • 1/2 cup diced onion
  • BBQ Sauce
  • Shredded Colby Jack Cheese or Cheddar
  • Burrito Sized Tortillas

Method
