I love to experiment with smoked desserts on the pellet grill. If you don’t have a smoker, you can easily make these in the oven, too. What I like about using the smoker is that you are saving room in the oven (especially for Thanksgiving) if you are using it for all of the other recipes. No it doesn’t taste smokey or overpowering. This lower cooking method helps retain the moisture of the pumpkin bars for a delicious tasting dessert to add to your spread.

Ingredients Needed for these Smoked Butterscotch Pumpkin Bars
Flour– Regular white all-purpose flour was used. You can easily swap for whole wheat if you prefer. Pumpkin Pie Filling– I chose pumpkin pie filling since it is already sweetened (making less ingredients needed). You can use pumpkin puree but then you will need to add sugar or other preferred sweetened and Baking Powder Baking Soda Salt- I used Baking Salt from Diamond Crystal Cinnamon Egg Butterscotch Chips– These are just like chocolate chips but butterscotch. If you want to use straight up chocolate chips- go for it. Optional Powdered Sugar or Whipped Topping– for serving. |
How to make these Pumpkin Bars on the Traeger Pellet Grill
Step 1: Combine the dry ingredients in a mixing bowl (flour, baking soda, baking powder, salt and cinnamon). Whisk it up.
Step 2: Add in the pumpkin pie filling and egg. Use a spatular or wooden spoon to mix it until well combined.
Step 3: Add in the butterscotch chips and fold them in.
Step 4: Spread the mixture into a 8×8 baking dish or aluminum pan. Transfer to the smoker and bake at 300 degrees for about 45 minutes.
How to serve these easy pumpkin bars
These were great by themselves but I chose to sprinkle them with powdered sugar. Or if you want them to taste a but more like pumpkin pie, you can serve with a dollop of whipped cream. Or you can even spread them with some cream cheese frosting on top!
Additions & Substitutions
- Have pure pumpkin? That is fine you will just need to add in some sugar or your favorite sweetener. You will also maybe want to add in more cinnamon or even pumpkin pie spices.
- Looking for pumpkin chocolate chip bars? Just swap the butterscotch for chocolate chips.
- Want to make them a little healthier? You can use whole wheat flour, you could sprinkle in some ground flax seeds, or even chia seeds.
- Have a large group? Double up the recipe and pour into a 9×13 baking dish.

What type of wood pellets to use?
I always usually roll with a signature blend of pellets. But you can use anything that would compliment the flavors such as pecan, cherry, or apple.

Equipment
- 1 mixing bowl
- 1 8×8 Baking dish or aluminum pan
Ingredients
- 1 cup flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp baking salt oe regular
- 1 tsp cinnamon
- 1 cup pumpkin pie filling
- 1 egg
- 1/2 cup butterscotch chips
- Powdered Sugar or Whipped Topping for serving
Instructions
- Combine the dry ingredients in a mixing bowl (flour, baking soda, baking powder, salt and cinnamon). Whisk it up.
- Add in the pumpkin pie filling and the egg. Use a spatular or wooden spoon to mix it until well combined. Add in the butterscotch chips and fold them in.
- Spread the mixture into a greased 8×8 baking dish or aluminum pan. Transfer to the smoker and bake at 300 degrees for about 45 minutes. (Toothpick should come out clean).
- Let cool and slice into squares. Can top with powdered sugar or serve with a dollop of whipped cream for serving.
Oven Instructions
- Follow the steps above but bake at 350 degrees F for about 30 minutes.
