Butterscotch pumpkin bars

I love to experiment with smoked desserts on the pellet grill. If you don’t have a smoker, you can easily make these in the oven, too. What I like about using the smoker is that you are saving room in the oven (especially for Thanksgiving) if you are using it for all of the other recipes. No it doesn’t taste smokey or overpowering. This lower cooking method helps retain the moisture of the pumpkin bars for a delicious tasting dessert to add to your spread.

Additions & Substitutions

  1. Have pure pumpkin? That is fine you will just need to add in some sugar or your favorite sweetener. You will also maybe want to add in more cinnamon or even pumpkin pie spices.
  2. Looking for pumpkin chocolate chip bars? Just swap the butterscotch for chocolate chips.
  3. Want to make them a little healthier? You can use whole wheat flour, you could sprinkle in some ground flax seeds, or even chia seeds.
  4. Have a large group? Double up the recipe and pour into a 9×13 baking dish.

What type of wood pellets to use?

I always usually roll with a signature blend of pellets. But you can use anything that would compliment the flavors such as pecan, cherry, or apple.
