Layers of soft graham crackers, cheesecake flavored pudding, whipped topping, strawberry frosting, and fresh strawberries makes this Strawberries N Cream Éclair Cake a must try. Great for Summer gathering while strawberries are in season or anytime for an easy no bake dessert.
So you probably have had old fashioned chocolate Éclair Cake and loved it….that’s why I decided to make a strawberry version and it is awesome!!! This Strawberries N Cream Éclair Cake will be your go to dessert for the Summer, I promise. All you need is 6 ingredients and about 10 minutes and your done! This is a no bake, as easy as it gets, type of recipe.
Strawberry season will be upon us shortly, here in Michigan it is the beginning of June. So if you are looking for a great thing to do with all those fresh berries, make this Strawberries N Cream Eclair Cake. This just needs to be refrigerated for a few hours or over night. This would be a great thing to take camping for the weekend or to your Summer barbecues!

Ingredients Needed for this no bake strawberry éclair cake
Graham Crackers– The crackers make the structure of the cake. The longer it refrigerates the softer they become.
Cheesecake Flavored Instant Pudding mix– I used cheesecake flavor but vanilla pudding or even chocolate would be tasty!
Milk– You need milk to make the pudding. I use whatever kind we have in the refrigerator (usually 2%)
Fresh strawberries– I used strawberry slices in the layers for a fresh taste added to the cake. For the best strawberries, select fully ripened strawberries that are fully red. Always wash strawberries after purchasing, too!
Canned Strawberry Frosting– With so many flavored canned frosting available, I chose strawberry frosting to compliment the dish. You could also use vanilla or even chocolate!
Whipped Topping– Cool whip or store brand works just fine. Or you could easily make your own whipped cream.
How to make this Strawberries N Cream Éclair Cake
First mix the cheesecake flavored pudding mix and cold milk until thickened. Then fold in the whipped topping to the pudding mix.
In a 9×13 pan lay a row of graham crackers down to cover the bottom.
Over the graham crackers, spread 1/4 of the pudding mixture.
Then add a layer of strawberries.
Then top with 1/4 of the pudding mixture just to cover the strawberries.
Repeat layers.
For the final row of graham cracker, lay smooth side up.
Then microwave the can of strawberry frosting (cap and foil removed) for about 30 seconds until pourable. Stir, pour, and spread over the top layer making sure to cover all of the graham crackers.
Refrigerate for a few minutes to set the frosting before placing the cover/foil over it. Then cover and refrigerate at least 4 hours- best overnight.
How to decorate the strawberries n cream cake
I usually just add a strawberry sliced on top or you can add chopped strawberries on top of the frosting. When serving, garnish with another strawberry or even a mint leaf.
