Why I love this Bacon Egg and Cheese Casserole with Biscuits
I wanted to try something different for Christmas morning brunch and since we have been obsessed with all things that have biscuits in it (Biscuits & Gravy Breakfast Skillet, Turkey Taco Bubble Bake) I whipped up this Bacon Breakfast Bubble Bake. It was a hit so I figured I would share with you guys!
As usual, this is a very simple recipe with just a few ingredients. The hardest part is cooking the bacon …I actually used the air fryer for easy prep and clean up. So cook your bacon to your liking, as crispy as you would like.
What you need for this Bacon Breakfast Bubble Bake
Refrigerated Biscuits (or make some Easy Homemade Biscuits!)- I just always grab store brand canned biscuits. (Homestyle, regular or butter flavor will work.) Bacon Eggs Cheese Milk Seasonings– I like garlic powder and pepper. But feel free to spice it up a bit. |
How many people does this breakfast casserole serve?
I have made this several times now, and each time it was a hit. This dish serves about 8 people for a generous serving or about 10 smaller pieces. Just figured I would throw that in there if you are trying to plan a breakfast for guests or family.
How to make this Bacon Breakfast Bubble Bake
Step 1: Cook the bacon
First cook you bacon with your preferred method. I like to cook ours in our Ninja Foodi. But stove top or oven works as well. Then chop it up.
Step 2: Break up the biscuits
Next break all the biscuits into pieces (or cut into quarters) in the bottom of a 9×13 casserole dish (if you have a smaller, deeper dish that work’s too). Then break the cooked bacon into pieces on top of the biscuits.
Step 3: Make egg mixture
Next you just whisk the eggs and milk together with seasonings and pour over the bacon. Top with the shredded cheddar cheese and bake!!
Step 4: Bake
Bake at 350 for about 35-40 minutes until the eggs are cooked. Slice and serve! I like mine with some ketchup or hot sauce.

Additions & Substitutions:
Can you use something besides bacon?
Yes! Turkey bacon, pork sausage, or even ham will work!
What other cheese would be good?
I love a milk cheddar, but any yellow cheese would be good. American, Colby Jack, or Sharp Cheddar. If you like a little heat- try some Pepper Jack!
Can I make this breakfast casserole of time?
I like to make it first thing in the a.m and then refrigerate until your guests are there or ready to eat. I think making it the night before would be fine, the biscuits may just not be as fluffy. I will have to test this and let you know.

Bacon Breakfast Bubble Bake
Ingredients
- 1 16 oz can flaky biscuits
- 1 16 oz package bacon
- 8 eggs
- 1/3 cup milk
- pepper & garlic powder to taste
- 1/2 cup mild cheddar cheese shredded
Instructions
- Cook bacon to your liking and break into pieces.
- Break or cut biscuits into pieces and lay on the bottom of sprayed 9x 13 casserole dish.
- Then add bacon pieces.
- Whisk eggs with milk, pepper, and garlic powder and pour over bacon and biscuits.
- Top with cheese.
- Bake at 350 for about 35-45 minutes until the eggs are cooked.
This recipe is a hit at my home. We enjoyed it so much. And I have one picky grandson. I will be making this breakfast bake again.

This looks wonderful, thinking about making it for Christmas morning. Is there a bread that I can use instead of biscuits? I know sounds crazy but can biscuits have a different taste for me, no time to make my own.

Good morning! I use the canned a lot in recipes because I don’t like them on their own so I get it! I would suggest a dinner roll dough or even crescent roll dough. If using crescent rolls i would cut into piece and maybe roll into balls? I would make the egg/bacon mixture on bottom then put the crescent rolls on top and bake. If you are up for it, I also have a 3 ingredient biscuit recipe that comes together quickly, too. Hope that helps! If you make it please let me know how it turns out for you!

I make something similar to this I use store bought croissants like small circles sliced to line the bottom of the pan placed very close together with then I add cubed boiled potatoes as a layer then bacon then ham then sausage if you have onion people I add sliced green onions ten pour the eggs and cream over then cover with the shredded cheese put in the fridge for at least 4 hours for the bread layer to soak up the eggs then I bake at 350 until the bread layer is golden brown I serve this with fruit and tea for a special morning breakfast
