Ready for one of the easiest weeknight meals? If you have never made enchiladas at home you are missing out! These Green Chile Beef Enchiladas are so good and perfect for a quick meal. These enchiladas are one of my go-to meals when I am not sure what to make.
These Beef Enchiladas with Tangy Green Sauce are sure to impress. This recipe is not only easy to follow but also customizable to suit your preferences. Add some shredded cheese, diced tomatoes, or jalapenos for an extra kick of flavor.
What I love about these Green Enchiladas with Beef
Soft flour tortillas filled with an easy taco meat filling and cheese, then topped with green enchiladas sauce and more cheese! Seriously the easiest and a great way to change up taco night at your house.
These Green Chile Beef Enchiladas are very simple, yet flavorful, and customizable. I make these with ground beef but chorizo would be good or ground turkey, too. These enchiladas are a great meal to make ahead of time and the n pop in the oven when you are ready. These also make a great freezer meal if you want to double the batch an freeze one.
What you need for these Green Chile Beef Enchiladas
- beef
- tortillas
- 1 can of diced green chiles
- a packet of taco seasoning
- cheese
- green enchilada sauce

How to make these easy Green Chile Beef Enchiladas
First start by browning the beef over medium heat and then drain any grease. Then add the green chiles, taco seasoning and water. Let simmer until thickened a bit.
Then pour half the can of enchilada sauce on the bottom of a 9×13 pan. In each tortilla spoon meat mixture and add cheese. Roll and line face down in pan. Top with the rest of the sauce and extra cheese and bake! BOOM DONE! Enjoy .. or Buen Provecho (in Spanish).?

Substitutions & Additions for these Enchiladas
- Ground turkey, ground chicken, or chorizo would be great!
- Like it a little spicy? Add a chopped jalapeno.
- Different cheese? Try some pepper jack or a habanero cheese!
- Chicken breasts? Yes just cook and shred then add the rest of the ingredients.
- You can stir in some salsa into the mix as well to add some flavor and vegetables.
Green Chile Beef Enchiladas
Ingredients
- 1 lb ground beef
- 1 10 oz. can green chile enchilada sauce
- 1 4.5 oz. can green chiles
- 1 1/2- 2 cups shredded Mexican style cheese divided
- 6 flour tortillas
- 1 pack of taco seasoning
- 1/3 cup water
Instructions
- Over medium heat brown meat, add green chiles, and stir.
- Add taco seasoning and water and stir until well combined.
- Cook for an additional 2 minutes until sauce has thickened.
- Remove from heat.
- In a 9×13 baking dish, pour 1/2 the green chile enchilada sauce on the bottom.
- In each tortilla, add cheese and spoon in meat mixture.
- Roll the tortillas up and place seam side down in baking dish.
- Pour the rest of the enchilada sauce over the enchiladas.
- Sprinkle with more cheese and bake at 350 for about 25 mins.
