Easy shamrock cake mix

If you know me by now, you know that I love celebrating Saint Patrick’s Day! These Shamrock Cake Mix Cookies are so easy to make, tasty, and festive for the month of March. Just a few ingredients is all you need to bust these fun Saint Patrick’s Day cookies out. Have the kids help make these for a fun activity, too!

Have you ever tried cake mix cookies? If not, you are seriously missing out. You don’t need to beat a bunch of butter and sugars and it doesn’t require too many steps in the baking process. Using cake mix provides all your dry ingredients into one easy flavorful packet.

Irish Cake Mix Cookies

What is a Shamrock?

The shamrock (or clover) is a plant that is native to Ireland. It represents Saint Patrick as it symbolized Christianity in Ireland. He thought it represented the Father, Son, and the Holy Spirit. Over time it has become a symbol that represents the country and heritage of it’s people! So it is always fun to help rock out some green and Shamrocks on St. Patrick’s Day (Irish or not).

How to make these Irish Themed Shamrock Cookies with Cake Mix

First start by mixing the white cake mix with the vegetable oil and eggs in a bowl. Mix until well combined. Then scoop the dough into balls and place onto a cookie sheet.

Then bake at 350 degrees for about 8-10 minutes. Once done to your liking, pull out of the oven and let cool.

For the White Chocolate:

Use your favorite white chocolate and chop it into chunks. Place into a glass bowl and microwave in intervals for about 30 seconds. Stir and continue to heat and stir until smooth. Then dip the cookies into the melted white chocolate and place back onto parchment paper and add sprinkles of choice. I found fun Irish ones but of course green would work, too!

This cake mix cookie recipe makes about 24 cookies. Serve them up on a fun platter and enjoy. Or keep them stored in an air tight container.

Shamrock Cake Mix Cookies

These fun and festive cake mix cookies are so easy to make and perfect for Saint Patrick's Day.

Cook Time 10 minutes

Servings 24 servings

Ingredients
  

  • 1 15 oz. box of white cake mix
  • 1/2 cup vegetable oil or similar
  • 2 eggs

For White Chocolate Dip:

  • 12 oz. of your favorite white chocolate chopped (or chips work, too)
  • Irish themed or green sprinkles to taste

Instructions
 

  • In a large mixing bowl combine the cake mix, the eggs, and the vegetable oil and mix until well incorporated.
  • Scoop batter into balls and place on a parchment paper lined baking sheet (optional).
  • Bake at 350 degrees for about 8-10 minutes or until cooked to your liking.

For White Chocolate Dip:

  • In a glass bowl add the white chocolate and heat in 30 second intervals, stirring between each until the chocolate is fully melted and smooth. (or use double boiler)
  • Then dip the cooled cookies into the white chocolate and set back on the parchment paper.
  • Add green sprinkles immediately before the chocolate sets.
